Just in the same way as in the US, people love certain Italian, French and Spanish dishes, as well as Mexican etc., Chinese have their 'favorite' food regions too.
Would you get better quality and value in downtown cafes? Probably. But, to see all the food in one place is an education in itself, so go for it, I say!
